Recipe - Down Home Smothered Steak

Today is good day to stay inside and be a little lazy. That means it's a good day to do supper in the crockpot using a recipe from The 163 Best Paleo Slow Cooker Recipes cookbook.

Today it's Down Home Smothered Steak.

Using a 3 1/2 quart crock pot, you'll need:

2 tbsp (30 ml) of clarified butter (I used olive oil)
2 lbs (1 kg) round steak
1 onion, sliced thinly
3 stalks of celery
1/2 tsp (2 ml) sea salt
1/2 tsp (2 ml) cracked peppercorns
2 cups (500 ml) beef stock
2 green bell peppers cut into thin strips

Trim any the fat off the outside of the steak. Heat some oil in a medium high heat pan. Add meat and brown on both sides, then place in crockpot.

Reduce heat to medium, adding a little more oil to the pan. Add onion and celery and cook while stirring for about 5 minutes to soften. Add salt and cracked peppercorns. Stir this in (Note: green pepper is not added here. It will be added 8 hours later).

Add beef stock and bring to a boil, then pour this over the meat in the crockpot.

Cover and cook on low for eight hours.

After eight hours add the sliced green pepper, cover and cook on high for 20 minutes.

Serve piping hot.

We had rice with ours for the sauce. Although the steak was tender and the entire dish smelled great, there was something missing. This dish needs a little more spice. I can't say it was bland but definitely something is missing.

I am going to add a little spice of some sort tomorrow night and saute the steak and ingredients, then pour it over noodles.

This is a dish that could be great. It needs spice, though, and next time I would also do something like add arrowroot to thicken the sauce.
