Recipe - Crock Pot Chicken Bacon Special

It's nice to relax on a Sunday and just let a crock pot do the cooking. I got this recipe from of the Best of Bridge Slow Cooker Cookbook. As I was flipping through the pages, this one jumped out at me and sounded delicious. It sure was.

"Was" you say?

Yes, it turns out that Teena has made it before. Now it's my turn.

It's a very simple recipe to make, which I like on a Sunday. You'll need:

  • 8 skinless bone-in chicken thighs. I buy them with the skin on and take it off myself. It only takes minutes and is cheaper than buying them already skinned
  • 8 slices of bacon
  • 1 onion, chopped
  • 1 apple,peeled and grated
  • 1 1/2 cups BBQ sauce, mild or spicy depending on what you like
  • 1/2 cup of chicken broth
  • 5-6 quart slow cooker or crock pot

Skin the chicken and and wrap a slice of bacon around each piece and place in the slow cooker.

Sprinkle the onion and apple over top. Pour in BBQ sauce and chicken broth.

Cover and cook for 6 hours. After the first hour, lift up each piece of chicken to allow the sauce to freely flow under it and place back down.

We served ours with rice.

The recipe is easy, foolproof and delicious. We'll be making this again!
