Banana Stuffed Rum Runner Chicken by Teena

Teena decided that we have so many cookbooks that we should start making use of them.

So tonight she made Banana Stuffed Rum Runner Chicken.

Bananas, cayenne, nutmeg, brown sugar, lime juice, bread crumbs, garlic and rum. Interesting mix!

There is a show too as the rum is set on fire, then poured over the baked chicken.

I loved the chicken and found all the flavours came through in the chicken. The taste of the stuffing was very heavy and, although I enjoyed it, I found it was something I could only have a small portion of. I am not saying this to be nice. It is very tasty but something I could enjoy only in a small portion.

It is a very enjoyable dish.

Next week my turn at a new recipe. It's a new system. Should be fun!
